In Africa Garri (pronounced gah-ree) dish made from cassava root. A high-calorie and Vit C-rich plant that is largely consumed all over the world. Nigeria, Indonesia, and Thailand are high producers of this plant.
The Cassava root is taken from root form to a flour-type mixture through a cooking/fermentation process. The flour is then used for many things including Garri and beans (similar to a porridge) and a type of bread called Swallow.
This plant can be sweet or not and the roots can be eaten raw or cooked. Cassava root is also used to make tapioca.
